Quality can greatly affect the cost and value of pork carcasses indirectly, whether at the packing plant for export or in the local supermarket retail case. In addition, pork quality can be a determinant in consumer satisfaction. A large percentage of pork is sold in processed form (~ 75%), making quality and consistency extremely important to processors.
