Scalding And Picking

Following bleeding, the dead birds are submerged in hot water (scalding) to loosen feather attachment. Scald water is highly agitated to improve water penetration through the feathers, and scalding usually takes from one to two minutes. Immediately following scalding, the carcasses pass through a series of machines with high-speed rotating rubber fingers that remove the feathers. Care must be taken in adjusting the pickers to remove the feathers without damaging the underlying skin. Heads are usually removed immediately after picking.
