Cereal Grain Production And Composition

Wheat, rice, and corn were the three largest cereal grains produced in the world in 1995/1996 and 1996/1997 (Table 1). Average chemical compositions of these and other commonly consumed grains are listed in Table 2. All cereal grains contain starch as the principal component. Vitamin, mineral, fatty acids, and amino acid contents of cereal grains have been published (3). Content and nutritive value of cereal proteins depend both on seed heredity and environment during cultivation and harvest.
