Consistency

Consistency has been defined as "that property of the material by which it resists permanent change of shape and is defined by the complete force flow relation" (8). This implies that the concept of consistency includes many aspects and cannot be expressed by one parameter. Today more importance is attached to spreadability than anything else in the evaluation of the consistency of butter. The general consensus is that butter should be spreadable at refrigerator temperatures. There is no suitable method available to measure such a subjective criteria as the spreadability of butter. For this reason, the firmness of butter, which should correlate well with spreadability, was selected as the parameter to be measured. It was recommended that the use of the cone penetrometer, along with other methods, could give good results (25).
