During the last five years, the automated cutting of poultry into portions has attracted enormous interest, particularly in Western Europe. A number of manufacturers now produce automatic chicken portioning machines. Here again, these systems consist of an overhead conveyor, which transports the carcass through a number of cutting stations. Chickens can be cut into virtually any number of portions as desired, by switching cutting units off or on. Depending on the precision of the cutting, a throughput of around 2500 to a maximum of 3000 birds per hour is now achievable. The boning of chicken breasts is also now very popular. A number of machines are available to automatically fillet the breast. These machines operate at a rate of about 1500 birds per hour.
