Effects Of Blanching

Water blanchers have been shown to be the main operation contributing to the solids content of cannery wastes, and some recent studies have considered the treatment and concentration of waste blanch water. The use of water as the blanch medium also allows the addition of certain chemicals as processing aids, such as citric acid, and this is reviewed elsewhere (1).
