Food Crops Storage

This article describes various factors to be considered during the storage of fresh fruits and vegetables and some supplemental methods used with cold storage. Space limitations preclude detailed prescriptions of storage for specific crops. This information is available in other publications (1-4).

Tissues of fruits and vegetables after harvest are still alive and continue to respire, metabolize, and change. Successful storage of fruits and vegetables extends the marketing period of these commodities and minimizes economic losses because most of the crop is utilized. Good storage conditions will maintain crop quality, reduce deterioration, render excellent salable commodities, and avoid causing injury to tissues by chilling, freezing or ammonia fumes.
