Successful storage of fruits and vegetables extends the marketing period of these commodities and minimizes economic losses because most of the crop is utilized. Good storage conditions will maintain crop quality, reduce deterioration, render excellent salable commodities, and avoid causing injury to tissues by chilling, freezing or ammonia fumes.
