Today, the term homogenizer is often applied to any piece of equipment that disperses or emulsifies. This equipment may include a turbine blade mixer, an ultrasonic probe, a high shear mixer, a colloid mill, a blender, or even a mortar and pestle. The more precise definition of a homogenizer is a machine consisting of a positive displacement pump and a homogenizing valve that forms a restricted orifice through which product flows.
