The emission spectrum of elastin is similar to that of Type I collagen with peak excitation near 370 nm. Macroscopic ultraviolet fluorometry was used to measure the gristle contents, elastin, and collagen Type I of beef (10).

Fluorescence emissions were measured with a mono-chromator and a photomultiplier tube. Intact tendons and elastic ligaments had a strong fluorescence emission peak around 440-450 nm and only weak fluorescence around 510 nm. The 510:450 nm ratio was correlated to the amount of gristle in comminuted meats.
