In a cryogenic system the refrigeration machinery for production of LIN or liquid C02 are large industrial units normally located at a distance remote from the food processing factory. With help of special transport equipment the cryogenics are transported from the place of manufacturing to storage tanks at the food factories.

From an economic viewpoint the principal difference between a mechanical refrigeration system and a cryogenic system is that for the former the investment cost for the food producer is fairly high while the running cost is low. The opposite goes for cryogenic systems. This fact is illustrated in Figure 28.
