Recent technological advances (bar coding, computerized control—Electronic Point of Sale, EPOS) have resulted in substantial changes in the management of the flow of product down the cold chain leading to Just-in-Time (JIT) inventory control. Instead of manufacturers producing stocks likely to be able to meet probable future sales to supermarkets or food service outlets and then awaiting sales orders, the sales outlets can now automatically call off the precise quantities needed, which in turn causes the manufacturers to schedule the required production. Reading the bar code of an individual package at a checkout automatically results in instructions passed back to the producing unit to replenish the stock.
