In spite of the improved performance of such blancher designs regarding energy and leaching, capital costs and other variable costs have been so high that the conventional water blancher has remained the most competitive system. For many large-scale operations this may no longer be true, and Table 3 compares the performance of various steam blanchers (13). The most recently developed energy efficient steam blancher is that manufactured by the Atlantic Bridge Company (ABCO), Canada (14). The principle of operation of the ABCO K2 was developed from the earlier IQB concept.
