Natural Toxicants

There are a large number of natural toxic chemicals in our daily diet. Toxicants may be chemical constituents of the food itself, contaminants from microbial infestation, or degradation products formed during food storage and processing. Toxic chemicals are commonly present in all plants, in which they act as protective agents against microbial attack, insects, and predators (82). Although the generally low level of these compounds together with a varied diet usually eliminate the risk of intoxification, the presence of many of these natural pesticides in our food seems to be receiving very little attention from the general public.

One well-known example of natural pesticides is the glycoalkaloids, solanine and chaconine, found in potatoes ch2oh ch2oh
