A phase of food science coming to the fore is that of so-called nutraceuticals (38-41). They are often also referred to a phytochemicals. In many respects, this phase of science is at the same stage as was research into vitamins 70 to 80 years ago. Nutraceuticals are chemicals in the food that either upon theoretical grounds or by observation appear to possess physiological properties. The questions are (I) do nonnutritive compounds affect in any way the action or use of demonstrated nutritional substances; if so, how and to what extent, and (2) are such actions beneficial or detrimental to health? The task is to relate the presence of one or more of the nutraceuticals to specific effects. Today, of course, isolation and identification of unknown compounds is far more feasible than it was when the first of the vitamins began to be unequivocally identified. Testing for effects however is no less arduous.
