Nutritional Labeling

Americans love their food. Their interest in all aspects of food has been steadily growing since the 1950s. Public demand for more and more information on food-product labels has been growing right along with this interest. Today, labels on food packages provide a wealth of facts about the products inside. It wasn't always this way, however. This chapter summarizes the development of food labeling in the United States and covers key elements of current labeling requirements. Emphasis is on the requirements of the U.S. Food and Drug Administration (FDA), which regulates the labeling of most packaged foods, except for meat and poultry products. These are the responsibility of the U.S. Department of Agriculture (USDA). Differences between what FDA and USDA require on product labels are minor.
