The cultivated olive (Olea europaea, Oleaceae) is a long-lived evergreen tree native to the Mediterranean basin. It is valued for its fruit and oil. The world production of olives in 1998 was 12,780,0551 (see Table 1). The Mediterranean countries, with —9,000,000 ha dedicated to this cultivar, accounted for 95% of the production. In the Mediterranean, 90% of the olive trees are grown for oil. World olive oil production is currently increasing; the commercial crop during 1998 was 2,527,929 t (see Table 2), with the European Union (EU) producing around 1,876,000 t (Spain 51%, Italy 24%, and Greece 23%), Tunisia 170,000 t, and Turkey 190,000 t of oil.
