Processing Operations

Processing potatoes into finished food products involves a sequence of operations dependent on the product being prepared. Figure 3 illustrates major operations typically used for processing French fries, chips, and flakes. The initial stages of processing are common to the three major types of potato processing. Receiving, washing, peeling, inspection, and cutting/slicing potatoes are done in a similar manner, even though they may not be done in exactly the same. The steps outlined in Figure 3 are specific to the product being produced.
