Ratite production exploded onto the U.S. scene in the 1980s. Individuals with breeding stock touted what they considered the birds' strong selling points: valuable hides; a low-fat red meat; and by-products with unique characteristics, such as emu oil. Given the initially small number of ratite breeders but the extensive publicity, breeding stock commanded extremely high prices for several years. With the saturation of the breeder market, quick profits were no longer to be made by strictly selling birds. As the 1990s come to a close, ratite operators must make their money from selling product and not stock.
