During washing of minced meat, a considerable amount of water-soluble and some insoluble proteins are lost, as much as 33% (on a minced meat weight basis, Fig. 3), of which water-insoluble myofibrillar proteins in fine particles unretained by a rotary screen can be recovered by a decanter centrifuge or a settling tank with a conical bottom (10). Both have been successfully used to improve the yield in recent years. Some efforts were made without commercial success to recover water-soluble proteins employing an ultrafiltration (UF) membrane system.
