Protein Lipid Interaction

Lipoproteins exist naturally in food systems such as egg yolk. However, lipids can also interact with proteins during food processing, thereby affecting the quality of foods such as bread and frozen fish. Protein-lipid interaction is the most important mechanism of emulsion formation. Analytical methods to measure this interaction include density gradient ultracentrifugation, fluorometry (43), gel filtration chromatography, and ultrafiltration. More sophisticated methods are electron spin-resonance spectroscopy using spin-labeling techniques with probes (44) and Raman spectroscopy (45).
