Skin Processing

Eel is not only used for food but also for other uses. Eel skin, for example, is processed into leather (Figs. 12 and 13). Although there is no fur on the eel skin, there are scales that are covered by follicles dispersed in the corium (14). The major steps in eel skin processing are liming, decoloring and removal of scales, removal of excess fat, tanning using alum, and glazing. Considering that the fat content of the eel skin is more than 25%, which is even higher than that of cattle, the removal of excess fat and scales are the more important steps in eel skin processing.
