Type of Processing Medium

The first retorts used steam at high temperatures and pressures as the processing medium for processing low-acid canned foods. Circulating water, steam/air mixtures and steam/water/air mixtures have also been used successfully as the processing medium. All of the processing media mentioned provide an efficient means of heat transfer to the containers. Regardless of the type of processing medium utilized, a system must be in place to circulate the medium to allow for uniform temperatures within the retort.
