Trichothecenes

The trichothecenes are a family of more than 150 structurally related compounds produced by several fungal genera (Fusarium, Cephalosporium, Myr-othecium, Stachybotrys, and Trichoderma). Chemically, they are sesquiterpenes characterized by a double bond at position C-9, an epoxide ring at C-12, and various patterns of hydroxy and acetoxy substitutions at positions C-3, C-4, C-15, C-7, and C-8. There are four naturally occurring trichothe-cene mycotoxins (deoxynivalenol, nivalenol, T-2 toxin, and diacetoxyscirpenol) produced in food and feed by Fusarium species.
